Gemlik variety is a type of olive with high table value with its small seed, thin skin and fleshy structure. The olives harvested in the black color period are first left to natural fermentation in brine (salty water) in order to extract the bitterness in their bodies and bring them to eating maturity.

Flavored olives are removed from the grain by natural ventilation and drying, and the excess water remaining in their bodies. This is why their surfaces are curly.

Olives carry the natural black color of the variety in this processing technique. Then the olives are calibrated and classified according to their grain size (XL, L, M). Olives are packaged by blending them with a mixture of oil and vinegar to add additional aroma and preserve
